While I would like to call myself a wine connoisseur, this is a bit of an exaggeration. I am, however, a dedicated and passionate self-proclaimed wine lover! Growing up in a house with my dad, my wine hero, my passion for Chardonnay grew as he continued to keep my glass half full. My first reaction when Bouchard Finlayson reached out was to take a moment of silence to thank the wine-gods for their exquisite gift.

It is only every so often that one comes across a truly exceptional Chardonnay. This wine often lacks flavor or appears bland. In order to rectify this, the wine is put into oak barrels, and you might end up with an off-balance Chardonnay. O, but not so with Crocodile Lair's Chardonnay! This wine bursts with sunshine, filling my ever-gloomy apartment with rays and colours of rainbows. Flavours such as lime, apple and citrus are abundant, yet in full and perfect harmony. And for those who love a touch of mineral spices, you will not be disappointed. Bouchard Finlayson's years of experience making top class Chardonnays are clearly evident in this remarkable wine.

While this Chardonnay will pair brilliantly with a beautiful buttery lemon-infused crayfish, I look to the good old faithful, chicken. There is beauty in the balance of simplicity, yet complexity, that a good roast chicken can bring to the table. Much like the Chardonnay - flourishing in its balance, I find the harmony of the two together as a delight to my taste buds.

I prepare my chicken thighs with a spice mix of coriander, cumin, salt and pepper, filling my home with delicious aromas as I cook it on a hot pan. I then ladle homemade chicken stock over the chicken and let it bake for 20 minutes. With a few squeezes of fresh lemon juice, the chicken is ready to be plated on a rich, buttery roasted butternut purée, pickled red onion, basil and mint oil, pumpkin seeds and cashew nuts topped with some crispy chicken skin. Crispy chicken skin is a must.

Although I believe in generosity, there is some part of me that wants to set the table for one, play romantic music, and pour myself a glass of Crocodile Lair's Chardonnay. Indulging in every. single. moment. A Eat. Pray. Love moment one can say.

This Chardonnay will also pair exquisitely with a homemade curry, a cheese platter, good conversation or even just a Tuesday afternoon. And sometimes we just want to drink a good Chardonnay on its own.
